Peri-Peri Vegan Couscous Wraps

200g couscousโฃ
300ml vegetable stockย โฃ
1 tbsp Low-Cal Peri Peri Sauceย โฃ
ยฝ squeezed lemonโฃ
1 tbsp extra virgin olive oilโฃ
ยผ tsp sea saltโฃ
ยผ tsp ground black pepperโฃ
20g raisinsโฃ
1 red pepper chopped and cubedโฃ

1. Place the couscous in a large bowl and cover with the hot vegetable stock. Place a plate or a sheet of foil on top of the bowl and leave for 5 minutes.โฃ
2. Once the stock has been absorbed by the couscous, fluff the grains up with a fork and add the remaining ingredients, mix well until combined then set aside.โฃ
3. Heat two wholemeal wraps in the microwave for 30 seconds. Spread 1 tsp of Low-Cal Peri Peri Sauce on each wrap then fill with your couscous mixture. Enjoy!ย โฃ
