Peri-Peri Vegan Couscous Wraps
𝘍𝘶𝘴𝘴-𝘧𝘳𝘦𝘦, 𝘧𝘪𝘭𝘭𝘪𝘯𝘨 𝘢𝘯𝘥 𝘧𝘶𝘭𝘭 𝘰𝘧 𝘧𝘭𝘢𝘷𝘰𝘶𝘳, 𝘢 𝘮𝘶𝘴𝘵 𝘩𝘢𝘷𝘦 𝘭𝘶𝘯𝘤𝘩!
300ml vegetable stock
1 tbsp Low-Cal Peri Peri Sauce
½ squeezed lemon
1 tbsp extra virgin olive oil
¼ tsp sea salt
¼ tsp ground black pepper
1 red pepper chopped and cubed
1. Place the couscous in a large bowl and cover with the hot vegetable stock. Place a plate or a sheet of foil on top of the bowl and leave for 5 minutes.
2. Once the stock has been absorbed by the couscous, fluff the grains up with a fork and add the remaining ingredients, mix well until combined then set aside.
3. Heat two wholemeal wraps in the microwave for 30 seconds. Spread 1 tsp of Low-Cal Peri Peri Sauce on each wrap then fill with your couscous mixture. Enjoy!
