This fresh tasting super-quick salad is full of Thai flavours like sweet chilli, peanuts, lime and coriander! A healthy lunch to make for the week ahead.



METHOD

  1. Heat a large, non stick pan with oil over a medium-high heat. Once hot, add diced chicken with a pinch of salt and garlic and cook for 5-6 min.⁣
  2. Meanwhile, add fine egg noodles to a pot and cover with boiled water. Bring to the boil over a high heat and cook for 4-5 min or until tender with a slight crunch. Once cooked, drain and rinse under cold water. ⁣
  3. Cut your vegetables, we have used peppers and spring onions. Shred a little gem lettuce and all to a large bowl. ⁣
  4. Add two tbsps of our 𝐋𝐨𝐰-𝐂𝐚𝐥 𝐒𝐰𝐞𝐞𝐭 𝐂𝐡𝐢𝐥𝐥𝐢 𝐒𝐚𝐮𝐜𝐞 and 1/2 juice of a lime to the drained noodles. Add sliced peppers and shredded lettuce and give everything a good mix up. Sprinkle with a tbsp of peanuts. ⁣
