* 600g Cooked Salmon Fillet โฃ
* 300g Boiled Sweet Potato
* 1/2 red onion choppedโฃ
* 80g whole breadcrumbsโฃ
* 1 tbsp olive oilโฃ
* 4 tbsp sweet chilli sauceโฃ
* 1/2 tsp chilli flakes โฃ
* Saltโฃ and Pepper

1. Place your salmon fillet into a large bowl and break it up into small pieces. Add the sweet potato, breadcrumbs and chopped red onion and give it a stir.โฃ
2. Add the sweet chilli sauce, chilli flakes and season with salt and pepper, give it another good mix.โฃ
3. Divide your mixture into 4 and roll each one into a ball. Pat it flat until you have something that resembles a fishcake. โฃ
4. Heat the olive oil in a large frying pan on a medium heat and add the fishcakes. Cook on one side for 4-5 minutes and then flip and cook the other side for a further 4-5 minutes.โฃ
5. Serve with your favourite veggies and sweet potato fries. ๐โฃ
