Mini Egg Protein Blondies

Ingredients
- 120g unsalted butter (melted)
- 100g light brown sugar
- 50g granulated sugar
- 1 large egg & 1 egg yolk
- 1 tsp vanilla extract
- 120g plain flour
- 40g vanilla whey protein powder
- 1/2 tsp baking powder
- Pinch of salt
- 100-150g chocolate mini eggs (crushed slightly)
Method
- Preheat your oven to 180°C (160°C fan)
- Line an 8x8 inch baking tin with parchment paper
- In a bowl, whisk together;
- Melted butter
- Brown sugar
- Granulated sugar - Mix until smooth and glossy then whisk in:
- 1 egg and 1 yolk
- Vanilla extract - Mix until fully combined and slightly thick
- In a separate bowl, mix;
- Flour
- Protein powder
- Baking powder
- Salt - Gradually fold the dry ingredients into the wet mixture
- Don't overmix - just combine until a soft dough forms
- Fold in most of the crushed mini eggs
- Save a handful for the top
- Spread the batter evenly into the tin
- Sprinkle remaining mini eggs on top
- Bake for 20-25 minutes
- Edges should be golden & centre slightly soft (it will set as it cools)
- Let cool in the tin for at least 30 minutes
- Slice into squares
